I need to talk to you about cake, namely Portokalopita which translates as orange pie, but it's a cake, yet made with filo pastry. Cake or pie, sponge or pastry, it will change your life!

If you've read One Last Letter from Greece, you will know this cake plays a very special part in the plot. It is a moment! I first discovered this heavenly cake when it was served as a complimentary pudding. Diabetics beware, it is soaked in a sugar syrup that is a massive glucose hit but utterly divine. The owner of the taverna kindly gave me her recipe with the caveat:


"You make it once, will be ok, second time not good, third better, fourth worse, then fifth is perfect."


Well.....the Acropolis wasn't built in a day out of MDF.....


It is worth the shredding of a kilo of filo and my trick is to pour cooled syrup on hot cake, although many swear by the opposite. Everyone seems to have their own take on it, but click HERE for my recipe.
